Few realize that anyone can engage in the creation of this universally popular food. Here's a brief synopsis. The methodology shouldn't intimidate: curdling is the only step that's strictly required. This means separating the milk into curds and whey, typically by acidifying the milk and adding coagulant. The coagulant may be rennent or a number of natural ingredients. After this, soft cheese is left. To make hard cheese, additional processes follow, like salting and heating. Aging follows, and may include the addition of certain microbes.
