This is the All Grain version of our Gravity Bomb Barleywine. This is a great beer for the upcoming winter holidays, but takes a little while to age so you'll want to brew this beer soon! Measuring in at a mere 11.1% alcohol, this Barley Wine will bring the best of them down! It is full of flavor and loaded with goodness. It's not shy on hop flavor either with 92 IBU's! We even add Oak Cubes to the secondary fermentation to add a unique subtle oak flavor profile. What else can we say? This beer is HUGE!

Gravity Bomb Barleywine All Grain Recipe


GRAINS

  • 17 lbs British Pale Malt

  • 1.5 lbs Crystal 60L Malt

  • 1 oz Roasted Barley

HOPS

  • 1 oz Magnum @ 30 minutes into boil

  • 1 oz Magnum @ 60 minutes into boil

  • 2 oz Centennial @ 85 minutes into boil

YEAST

  • Dry: Saflager US-56 Dry American Ale Yeast

  • Liquid: Wyeast 1056 American Ale

EXTRAS

  • 1 tsp Irish Moss @40 minutes into boil

  • 1 oz American Oak Cubes (added in secondary fermenter)

  • 3/4 cup Bottling Sugar or Coopers Carbonation Drops

  • Straining Bags for Hops

INSTRUCTIONS

  1. Mash Grains @ 150F for 60 minutes or until converted.

  2. Sparge with 170F water to collect 6-7 gallons of wort.

  3. Add hop additions and extras per recipe above. Total boiling time is 90 minutes. Be sure to boil for 30 minutes before any hop additions.

  4. Cool down wort after 90 minute boil.

  5. Pitch yeast when wort is cooled to 70-75F.

  6. Ferment at 65-70F until complete. Rack beer to a secondary fermenter and add the oak cubes (prepare cubes by boiling in 2 cups water for 5 minutes. Add the entire mixture of water and oak cubes to the fermenter). Age in the secondary for 2 weeks, then bottle or keg the beer. Age for a least 3 weeks before drinking.

  Celebration Ale Clone All Grain Version - This is the All Grain version of our Celebration Ale Clone. This beer is wonderfully strong and hoppy with loads of Chinook, Cascade and Centennial hops. The color of the beer is a beautiful deep amber, with a white frothy head. Our cloned version is 7.7% abv, which is a bit higher than the current commercial version of Celebration Ale, but we find it to be quite pleasant this way and besides, it helps make the holidays a little more tolerable!
